Meatballs

Ingredients

1 lb ground beef

1 1lb ground pork 

255 grams onion

182 grams bread crumbs 

1 tbsp olive oil 

2 tbsp miso paste

2 tbsp Worcestershire 

3 tbsp dried chives or dried parsley 

1 tbsp coconut aminos

1.5 tsp salt

1 tsp garlic powder

Instructions

Combine the thawed ground pork and beef in a bowl. Add the salt, Worcestershire, dried chives, garlic powder, miso and coconut aminos. Mix together thoroughly with your hands. 

Preheat the oven to 450f.

Make the breadcrumbs by tearing the crusts of bread into chunks. Using a food processor with the blade attachment, chop the bread into crumbs. Add the olive oil and a pinch of salt to the crumbs and process until fine. Add the breadcrumbs to the meat.

Chop the onion into large chunks and add to the food processor bowl with the blade attachment. Chop until the onions with the food processor until they are very fine. Add to the meat.

Mix the meatballs together with your hands until all of the ingredients are thoroughly combined.

Using a 1.5 tbsp cookie scoop, scoop the meatballs onto a sheet pan. 

Place the sheet pan in the center of the oven and bake for 18 minutes, or until nicely browned. 

Serve immediately. Enjoy with pasta, soup, in a sandwich, or in a farmer’s bowl.
